Ingredients

Roasted Apples

  • 2 Honeycrisp or Gala or Sweet Tango apples, sliced
  • 2 Tbsps Extra virgin olive oil
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/2 tsp ground allspice

Soup Base

  • 1 Tbsp Extra virgin olive oil
  • 1 Tbsp unsalted butter
  • 3 garlic cloves, minced
  • 4 cups vegetable stock, organic (divided)
  • 1 Tbsp raw honey or maple syrup
  • 4 Tbsps organic all-purpose flour
  • 1 tsp sea salt
  • 1 tsp black pepper
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1 tsp dried thyme
  • 1/2 tsp ground cinnamon
  • 1/8 tsp ground allspice
  • 2 cups organic pumpkin puree (NOT Pie filling!)
  • 1 cup organic heavy cream
  • 1 cup freshly-grated parmesan cheese

Toppings

  • Homemade croutons

Instructions

  1. Preheat Oven and Prepare for Roasting: Set your oven to 400°F (204°C) and line a baking sheet with parchment paper or foil to prepare for roasting the apples.
  2. Roast the Apples: Arrange the sliced apples on the prepared baking sheet, drizzle with olive oil, and sprinkle evenly with cinnamon, nutmeg, and allspice. Bake for 15-20 minutes until the apples are tender, golden, and slightly wilted. Remove and allow to cool briefly.
  3. Prepare Homemade Croutons: Follow your preferred recipe to make homemade croutons, optionally using brioche for extra flavor. Set aside for topping the soup later.
  4. Sauté Garlic: Heat 1 tablespoon of extra virgin olive oil in a medium-sized Dutch oven over medium-high heat. Add minced garlic and sauté for 1-2 minutes until fragrant, then remove from heat.
  5. Blend Apple Mixture: Transfer the sautéed garlic, roasted apples, and 2 cups of vegetable stock into a high-powered blender. Blend on high speed until completely smooth and free of chunks.
  6. Create Soup Roux: Using the same Dutch oven over medium-high heat, melt the unsalted butter. Add the flour along with salt, black pepper, smoked paprika, garlic powder, oregano, basil, thyme, cinnamon, and allspice. Stir continuously to combine and cook the flour until it forms a roux, about 1-2 minutes.
  7. Add Remaining Stock and Thicken: Slowly whisk in the remaining 2 cups of vegetable stock, ensuring the mixture is smooth and lump-free. Continue stirring until the soup base thickens slightly.
  8. Combine Puree and Cream: Stir in the blended apple mixture, pumpkin puree, heavy cream, and honey or maple syrup. Whisk thoroughly until all ingredients are fully incorporated and the soup begins to thicken.
  9. Simmer Soup: Bring the soup to a gentle boil for 1-2 minutes, then reduce the heat to low and let it simmer for 5-6 minutes to develop flavor and thicken further.
  10. Add Cheese and Finish: Remove the pot from heat. Stir in freshly grated Parmesan cheese until melted and fully integrated into the soup.
  11. Serve: Ladle the soup into bowls and garnish with the homemade croutons as desired. Serve immediately for the best experience.
  12. Enjoy: Savor this rich, creamy, and warmly spiced roasted apple pumpkin soup with your favorite comfort food accompaniments.

Notes

  • You can substitute raw honey with maple syrup for a vegan alternative.
  • Use fresh pumpkin puree or canned pure pumpkin (not pie filling) for best results.
  • Adjust spices according to your taste preference; add a pinch of cayenne for some heat.
  • Store leftover soup in an airtight container in the refrigerator for up to 3 days.
  • Reheat gently on stovetop over low heat to prevent curdling of the cream.
  • For a thicker soup, reduce the liquid slightly or add more flour during roux stage.
  • Make sure to use a high-powered blender to get a perfectly smooth soup texture.
