Ingredients

Shrimp and Sauce

  • 1 lb large shrimp, peeled and deveined
  • Salt and pepper, to taste
  • 2 tbsp olive oil
  • 3 tbsp unsalted butter
  • 5 cloves garlic, minced
  • 1 tsp paprika
  • ½ tsp red pepper flakes (optional)
  • ½ cup chicken broth
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • 1 tbsp lemon juice
  • 2 tbsp chopped parsley (optional, for garnish)

Rice

  • 1 cup long-grain white rice
  • 2 cups water or chicken broth
  • Salt, to taste (for rice)
  • 1 tbsp butter (for rice)

Instructions

  1. Cook Rice: Combine 1 cup long-grain white rice, 2 cups water or chicken broth, salt, and 1 tbsp butter in a medium saucepan. Bring the mixture to a boil, then reduce heat to a gentle simmer, cover with a lid, and cook for 18 to 20 minutes until the rice is tender. Once done, remove from heat and keep covered to allow the rice to steam and stay warm.
  2. Prepare Shrimp: Pat the shrimp dry with paper towels to ensure they sear properly. Season them evenly with salt, pepper, and paprika for flavor and color.
  3. Cook Shrimp: Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Arrange the shrimp in a single layer to ensure even cooking. Cook the shrimp for 1 to 2 minutes on each side until they turn pink and become opaque. Remove the shrimp from the skillet and set aside.
  4. Make Garlic Butter Sauce: Reduce the skillet’s heat to medium, then add 3 tablespoons of unsalted butter and the minced garlic. Cook for about 30 seconds until the garlic is fragrant, being careful not to burn it.
  5. Deglaze Pan: Pour in ½ cup chicken broth while scraping the bottom of the pan to loosen any browned bits, adding extra flavor. Let the broth simmer for 1 to 2 minutes to slightly reduce.
  6. Add Cream and Cheese: Stir in 1 cup heavy cream and ½ cup grated Parmesan cheese. Allow the sauce to simmer gently for 3 to 5 minutes until it thickens slightly to a creamy consistency.
  7. Finish Sauce: Add 1 tablespoon lemon juice and ½ teaspoon red pepper flakes if desired for a little heat. Stir well to combine all flavors.
  8. Toss Shrimp in Sauce: Return the cooked shrimp to the skillet and toss them in the creamy garlic butter sauce. Heat through for about 1 minute to meld all flavors together.
  9. Serve: Serve the creamy garlic butter shrimp hot over the steamed rice and garnish with chopped parsley if using. Enjoy your flavorful, creamy shrimp dish!

Notes

  • For a spicier kick, increase the amount of red pepper flakes or add a dash of cayenne pepper.
  • You can substitute chicken broth with vegetable broth for a milder flavor.
  • Make sure not to overcook the shrimp to keep them tender and juicy.
  • Use freshly grated Parmesan for the best richness and flavor in the sauce.
  • Leftover shrimp and sauce can be stored in an airtight container in the refrigerator for up to 2 days.
