Ingredients

Corn Mixture

  • 3 cups corn (fresh, frozen, or canned — drained well)

Salad

  • 1 large cucumber (chopped)
  • 1 small red onion (finely chopped)
  • 1/4 cup pickles (sliced or chopped)
  • 1 large chicken breast (cooked and cubed or shredded)
  • 1/4 cup fresh cilantro (chopped)

Dressing

  • 3/4 cup plain fat-free Greek yogurt
  • 1/4 cup light mayonnaise
  • Juice of 1 lime
  • 2 teaspoons minced garlic
  • 1/2 teaspoon chili powder
  • 1/4 to 1/2 teaspoon salt (to taste)

Instructions

  1. Roast the Corn: Heat a skillet over medium-high heat. Add butter and corn. Sprinkle with salt and chili powder. Cook for 4 to 5 minutes, stirring infrequently to allow the corn to become lightly golden and roasted. Once done, remove from heat and let the corn cool completely.
  2. Prepare the Dressing: In a small bowl, whisk together the plain fat-free Greek yogurt, light mayonnaise, lime juice, minced garlic, chili powder, and salt until the mixture is smooth. Taste and adjust the seasoning as needed for balance.
  3. Combine Salad Ingredients: In a large bowl, mix the chopped cucumber, finely chopped red onion, sliced or chopped pickles, cooked and cubed or shredded chicken breast, and chopped fresh cilantro. Add the cooled roasted corn to the bowl.
