A hearty and easy breakfast casserole featuring a flaky crescent roll crust layered with savory breakfast sausage, fluffy eggs, and melted cheddar cheese. Perfect for feeding a crowd or prepping ahead for busy mornings, this casserole comes together quickly and bakes to golden, cheesy perfection in just 45 minutes.

Ingredients

Pastry Base

  • 1 can crescent rolls

Filling

  • 1 pound mild breakfast sausage
  • 6 eggs, beaten
  • 2 cups shredded cheddar cheese

Instructions

  1. Preheat and Prepare Pan: Preheat your oven to 350°F (175°C). Lightly spray a 9×13 inch baking dish with nonstick cooking spray to prevent sticking.
  2. Cook Sausage: In a skillet over medium heat, brown the breakfast sausage until fully cooked, breaking it up into crumbles. Drain any excess grease to keep the dish from being too greasy.
  3. Assemble Casserole: Unroll the crescent rolls and spread them evenly on the bottom of the prepared baking dish to form a crust. Evenly distribute the cooked sausage on top of the crescent roll layer. Pour the beaten eggs over the sausage layer, making sure it covers the surface. Generously sprinkle the shredded cheddar cheese over the top.
  4. Bake: Place the casserole in the preheated oven and bake for 30 minutes, or until the cheese is melted, bubbly, and slightly golden, and the eggs are set.
  5. Serve: Let the casserole cool for a few minutes before slicing. Serve warm for a delicious and filling breakfast or brunch.

Notes

  • For a spicier version, use spicy breakfast sausage instead of mild.
  • You can add chopped vegetables like bell peppers or onions to the sausage while cooking for extra flavor and nutrition.
  • Make ahead by assembling the casserole the night before and refrigerating; bake in the morning, adding a few extra minutes to the baking time if baking straight from the fridge.
  • Try substituting cheddar cheese with mozzarella or a blend of cheeses for different flavor profiles.
  • If crescent rolls are unavailable, puff pastry can be used as an alternative crust.
