Delightful Cranberry Brie Bites featuring creamy Brie, tangy whole berry cranberry sauce, and crunchy roasted pecans, all nestled in flaky crescent dough and baked to golden perfection. Perfect for holiday parties or elegant appetizers, these bite-sized treats combine savory and sweet flavors with aromatic rosemary sprigs for a festive touch.

Ingredients

For the Dough and Base

  • Cooking spray, for greasing
  • All-purpose flour, for dusting
  • 1 tube crescent dough (about 8 oz)

For the Filling

  • 1 wheel of Brie cheese (8 oz)
  • 1/2 cup whole berry cranberry sauce
  • 1/4 cup finely chopped roasted, unsalted pecans
  • 6 rosemary sprigs, cut into 1-inch pieces

Instructions

  1. Prepare the Oven and Muffin Tin: Arrange a rack in the center of the oven and preheat to 375°F (190°C). Grease a mini 24-cup muffin tin thoroughly with cooking spray to prevent sticking.
  2. Prepare the Dough: Lightly flour a clean surface and roll out the crescent dough, pinching together any seams to create a uniform sheet. Cut the dough into 24 equal squares to fit into each muffin cup.
  3. Line the Muffin Cups: Press each dough square gently into the prepared muffin tin cups, forming a small cup shape that will hold the filling.
  4. Add the Filling: Cut the Brie cheese into small bite-sized pieces and place one piece inside each dough cup. Top each piece of Brie with a spoonful of whole berry cranberry sauce, sprinkle with finely chopped roasted pecans, and garnish with a single 1-inch rosemary sprig for aroma and flavor.
  5. Bake: Place the muffin tin in the preheated oven and bake until the pastry is golden brown and cooked through, about 15 minutes.
  6. Serve: Remove from oven and allow to cool slightly before serving warm as an elegant appetizer or party bite.

Notes

  • If crescent dough is unavailable, puff pastry can be a substitute for a similar flaky texture.
  • Ensure Brie rind is either left on or removed according to personal preference; the rind is edible but some may choose to remove it.
  • Use fresh or frozen whole berry cranberry sauce for best texture and flavor contrast.
  • Rosemary sprigs add visual appeal and aromatic flavor; they can be finely chopped and mixed into the filling if preferred.
  • To make ahead, assemble the bites and refrigerate the muffin tin; bake just before serving.
