A simple and versatile Cottage Cheese Flatbread recipe that combines eggs and cottage cheese into a smooth batter, baked until golden brown. Perfect as a low-carb base for sandwiches or pizzas, this flatbread is quick to prepare and customizable with herbs like oregano for extra flavor.

Ingredients

Main Ingredients

  • 2 Large Whole Eggs
  • 1 Cup Cottage Cheese (Full, Reduced, or Fat Free; look for Low Sodium)

Optional Seasonings

  • ¾ Teaspoon Garlic Powder
  • 1 Teaspoon Italian Seasoning
  • Oregano (for topping)

Instructions

  1. Combine Ingredients: Add the eggs, cottage cheese, garlic powder, and Italian seasoning into a food processor or blender.
  2. Blend Until Smooth: Process or blend the mixture continuously until it forms a smooth, homogenous batter with no lumps.
  3. Prepare Baking Sheet: Line a baking sheet with parchment paper and lightly coat the paper with cooking spray to prevent sticking.
  4. Pour and Shape Batter: Pour the blended mixture onto the prepared baking sheet and evenly spread it out, shaping it to your desired flatbread size and thickness.
  5. Add Toppings: Sprinkle oregano or any other preferred herbs evenly on top to enhance the flavor.
  6. Bake: Place the baking sheet in a preheated oven at 350°F (176°C) and bake for approximately 30-35 minutes. Note that thicker flatbreads might require up to 50 minutes.
  7. Check for Doneness: Remove the flatbread once the surface has started to brown and it is cooked through.
  8. Cool: Allow the flatbread to cool completely on the baking sheet before slicing or serving to ensure it holds together properly.

Notes

  • You can use full-fat, reduced-fat, or fat-free cottage cheese according to your preference.
  • Look for low sodium cottage cheese to keep the salt content moderate.
  • Optional garlic powder and Italian seasoning add flavor but can be omitted or substituted.
  • Adjust baking time depending on the flatbread thickness; thinner spreads bake faster.
  • This flatbread works well as a base for quick pizzas, sandwiches, or served plain as a snack.
  • Make sure to let the flatbread cool completely for easier handling and better texture.
