  2. Prepare cornstarch slurry and combine: In a small saucepan, whisk together the cornstarch and a small amount of the blended cottage cheese mixture to create a smooth slurry. Gradually add the remaining cottage cheese mixture to the saucepan while whisking constantly to combine.
  3. Cook sauce until thickened: Place the saucepan over medium heat and cook the mixture for 4-5 minutes, continuously whisking until the sauce thickens to a creamy consistency. Then, add salt, black pepper, and Italian seasoning, stirring well to incorporate all the flavors.
  4. Add remaining parmesan and combine with pasta: Remove the saucepan from heat and stir in the remaining parmesan cheese until melted and well mixed. Toss the sauce with 8-10 ounces of cooked pasta of your choice, ensuring the pasta is coated evenly before serving.
