Ingredients

Waffle Batter

  • 6 tablespoons Land O Lakes® Salted Butter
  • 1 cup pumpkin puree
  • 1 1/2 cups spiced apple cider
  • 2 large eggs
  • 2 tablespoons pure maple syrup
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1 1/2 teaspoons cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg
  • 1/2 teaspoon kosher salt

Salted Maple Butter

  • 1/2 cup butter
  • 1/2 cup maple syrup
  • 1 pinch flaky sea salt

Instructions

  1. Browning the Butter: Add 6 tablespoons of salted butter to a medium pot over medium heat. Cook and stir frequently for 2-3 minutes until the butter becomes browned and smells toasted. Remove from heat.
  2. Mixing the Batter: Pour the browned butter into a large mixing bowl. Whisk in the pumpkin puree, spiced apple cider, eggs, 2 tablespoons maple syrup, and vanilla extract until combined.
  3. Adding Dry Ingredients: Add the all-purpose flour, baking powder, baking soda, cinnamon, ground ginger, ground nutmeg, and kosher salt to the wet mixture. Stir just until combined; a few lumps are okay. Let the batter rest for 10 minutes to hydrate and thicken slightly.
  4. Preparing Maple Butter: In a small bowl, combine 1/2 cup softened butter with 1/2 cup maple syrup and a pinch of flaky sea salt. Mix well until smooth and set aside.
  5. Cooking Waffles: Preheat your waffle iron as per the manufacturer’s instructions. Pour the batter onto the waffle iron and cook waffles until golden brown and crisp, according to your waffle iron’s settings.
  6. Serving: Serve warm waffles topped generously with the salted maple butter and additional maple syrup if desired. Enjoy your comforting fall breakfast!

Notes

  • Use fresh spices for the best flavor impact.
  • Allowing the batter to rest enhances waffle texture.
  • Adjust maple syrup quantity in the butter to suit your sweetness preference.
  • If you don’t have spiced apple cider, you can use regular apple cider with a pinch of cinnamon.
  • Waffle cooking times may vary depending on your waffle iron model.
