Ingredients

Cookie Dough

  • 1 cup cold unsalted butter, cubed
  • 1 cup light brown sugar
  • 1/2 cup granulated sugar

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper and set aside for easy cleanup and to prevent sticking.
  2. Cream Butter and Sugars: In the bowl of a stand mixer fitted with the paddle attachment, combine cold cubed butter, light brown sugar, and granulated sugar. Beat on medium speed for about 2 minutes until the mixture is light, fluffy, and well combined. Scrape down the sides of the bowl as needed to incorporate all ingredients.
  3. Add Cocoa and Wet Ingredients: Blend in the cocoa powder until evenly incorporated. With the mixer still on medium speed, add the eggs, vanilla extract, baking soda, and kosher salt. Continue mixing for about 1 minute until the batter is smooth and uniform. Scrape the bowl sides as necessary.
  4. Mix in Flour: Reduce the mixer speed to low and gradually add the all-purpose flour. Mix until just combined to avoid overworking the dough.
  5. Fold in Chocolate Chips: Using a spatula, gently fold the mini chocolate chips into the dough until evenly distributed.
  6. Prepare Sprinkles: Pour the Halloween sprinkles into a shallow bowl and set aside for coating the cookies later.
