A classic Chicken Waldorf Salad featuring crisp apples, crunchy celery, sweet grapes, and tender roast chicken all tossed in a creamy tangy homemade dressing. Perfect as a refreshing side dish or light lunch, this salad combines fresh fruits, nuts, and savory chicken for a deliciously balanced flavor and texture.

Ingredients

For the Dressing:

  • ½ cup mayonnaise
  • 1 tablespoon Dijon mustard
  • Juice of half a lemon

For the Salad:

  • 5 ribs celery, chopped
  • 2 cups red grapes, quartered
  • 2 Granny Smith apples, cored and chopped
  • 2 cups roast chicken, chilled and cubed
  • 1 tablespoon fresh mint, finely chopped
  • 1 cup walnuts, freshly shelled and rough-chopped or broken by hand
  • Salt and pepper to taste

Instructions

  1. Prepare the Dressing: In a small bowl, whisk together the mayonnaise, Dijon mustard, and lemon juice until smooth and well combined. Set aside to let the flavors meld.
  2. Mix the Salad Ingredients: In a medium-sized bowl, combine the chopped celery, quartered grapes, chopped apples, cubed roast chicken, chopped fresh mint, and walnuts. Gently toss these ingredients to evenly distribute them.
  3. Add the Dressing and Season: Pour the prepared dressing over the salad mixture and toss gently to coat everything evenly. Taste and season with salt and pepper according to your preference.
  4. Serve Immediately: Transfer the salad to individual plates or a serving bowl and serve right away to enjoy the fresh, crisp textures and flavors.

Notes

  • Use chilled roast chicken for best flavor and texture.
  • If preferred, you can substitute mayonnaise with Greek yogurt for a lighter dressing.
  • For extra crunch, toast the walnuts lightly before adding them.
  • Serve immediately to prevent the apples and celery from becoming soggy.
  • Peeling the apples is optional based on your texture preference.
