A comforting and easy-to-make Chicken Broccoli Casserole featuring tender chicken, fresh broccoli, creamy broccoli cheese soup, and a crispy stuffing topping baked to golden perfection. This hearty casserole is perfect for a family dinner and combines cheesy goodness with a satisfying crunch.

Ingredients

For the Casserole

  • 2 cups cubed cooked chicken
  • 2 cups fresh broccoli florets
  • 1 can (10-3/4 ounces) condensed broccoli cheese soup, undiluted

For the Topping

  • 1 package (6 ounces) chicken stuffing mix
  • 1-1/2 cups water
  • 1 cup shredded cheddar cheese

Instructions

  1. Prepare stuffing: Follow the directions on the stuffing mix package, using only 1-1/2 cups of water to prepare the stuffing. Set aside after preparation.
  2. Preheat oven: Heat your oven to 350°F (175°C) to get it ready for baking the casserole.
  3. Assemble casserole: Grease an 11×7 inch baking dish. In a large bowl, combine the cubed cooked chicken, fresh broccoli florets, and the undiluted condensed broccoli cheese soup. Mix well, then transfer this mixture evenly into the prepared baking dish.
  4. Add topping: Spread the prepared stuffing mixture evenly over the chicken and broccoli mixture in the baking dish. Then sprinkle the shredded cheddar cheese evenly on top of the stuffing layer.
  5. Bake covered: Cover the casserole with foil and bake in the preheated oven for 20 minutes to allow the flavors to meld and the casserole to heat through.
  6. Bake uncovered: Remove the foil and continue baking for an additional 10 to 15 minutes, or until the casserole is hot throughout and the cheese on top is melted and slightly browned.
  7. Rest before serving: After removing from the oven, let the casserole rest for about 10 minutes to set properly, making it easier to serve and enjoy.

Notes

  • Use freshly cooked chicken or rotisserie chicken for convenience and best flavor.
  • Fresh broccoli can be steamed lightly if you prefer it softer before adding to the casserole.
  • You can substitute the cheddar cheese with your favorite melting cheese like Monterey Jack or mozzarella.
  • Make sure to cover the casserole during the first part of baking to prevent the cheese and stuffing from burning.
  • Letting the casserole rest is key for it to firm up nicely and make serving easier.
