Perfect for a flavorful lunch or dinner, these burritos combine simple ingredients with pan-roasting and stovetop toasting techniques to deliver a satisfying and easy-to-make dish in just 30 minutes.

Ingredients

Chicken

  • 2 chicken breasts
  • Salt, to taste
  • Black pepper, to taste
  • 1 tablespoon mustard
  • 1 tablespoon olive oil

Filling

  • 2 cups cooked and shredded chicken (from above)
  • 1 cup grated mozzarella cheese
  • 1 avocado, diced
  • 2 tablespoons chopped cilantro

Burritos

  • 4 large tortillas
  • 4 tablespoons sour cream
  • 1 tablespoon oil (for toasting tortillas)

Instructions

  1. Cook the Chicken: Heat 1 tablespoon olive oil in a frying pan over medium heat. Season chicken breasts with salt and pepper, then place in the pan. Roast for about 5 minutes on each side until golden. Spread 1 tablespoon mustard evenly over the chicken, add approximately 1/4 cup water, cover, and cook for a few more minutes until the chicken is thoroughly cooked and tender.
  2. Shred the Chicken: Remove chicken from the pan and cut into thin strips or shred it using forks.
  3. Prepare the Filling: In a mixing bowl, combine the shredded chicken, grated mozzarella cheese, chopped cilantro, and diced avocado. Mix gently to combine all ingredients evenly.
  4. Assemble the Burritos: Lay out each tortilla flat and spread 1 tablespoon sour cream over the surface. Divide the chicken mixture evenly, placing it in the center of each tortilla. Roll up the tortillas tightly to form burritos.
  5. Toast the Burritos: Heat 1 tablespoon oil in a pan over medium-high heat. Place all four burritos seam side down in the pan. Cook for 2 minutes until the tortilla bottoms are golden and crisp. Carefully flip and cook the other side for an additional 1 minute or until golden.
  6. Serve: Remove from heat and serve the burritos warm for the best flavor and texture experience.

Notes

  • You can substitute mozzarella cheese with cheddar or Monterey Jack for more flavor variety.
  • For a spicier kick, add some chopped jalapeños or a dash of hot sauce to the chicken mixture.
  • Use corn tortillas for a gluten-free option, but warming them carefully prevents breakage.
  • Leftover burritos can be wrapped in foil and reheated in a pan or oven for a quick meal next day.
  • Add lime juice over the avocado for extra freshness and to prevent browning.
