Ingredients

Wet Ingredients

  • 1 cup butter, at room temperature
  • 1 cup packed light or dark brown sugar
  • ¼ cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract

Dry Ingredients

  • 1 ½ cups all-purpose flour
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ½ teaspoon ground cinnamon
  • 3 cups old-fashioned rolled oats (not quick cooking)

Optional Add-ins

  • 1 cup semi-sweet chocolate chips
  • Chopped nuts
  • Dried fruit
  • M&Ms

Finishing

  • Coarse or flaky salt for sprinkling (optional)

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) and line a sheet pan with parchment paper to prevent sticking.
  2. Cream Butter and Sugars: Using a stand mixer fitted with a paddle attachment or a hand-held mixer, beat the room temperature butter, brown sugar, and granulated sugar together until creamy and smooth, about 2 to 3 minutes.
  3. Add Eggs and Vanilla: Incorporate the eggs one at a time, mixing well after each addition, then add the vanilla extract and continue mixing until fully combined.
  4. Mix Dry Ingredients: In a separate medium bowl, whisk together the all-purpose flour, baking soda, salt, ground cinnamon, and old-fashioned rolled oats to evenly distribute all dry components.
  5. Combine Wet and Dry: Gradually add the dry mixture to the butter mixture and mix on low speed until just combined. Avoid overmixing to maintain chewy texture.
  6. Portion Dough: Using a medium (1½ tablespoon) or large (3 tablespoon) cookie scoop, portion the dough and place scoops a few inches apart on the prepared sheet pan.
  7. Bake: Bake in the preheated oven until edges begin to turn golden—about 8 to 10 minutes for smaller cookies, 10 to 12 minutes for larger ones.
  8. Repeat and Cool: Repeat the scooping and baking process with remaining dough. Once baked, optionally sprinkle the cookies with coarse or flaky salt.
  9. Cool Completely: Allow cookies to cool on the sheet pan for 5 minutes, then transfer to a wire rack to cool completely. Enjoy within a few days for best freshness.

Notes

  • Use old-fashioned rolled oats for the best chewy texture; quick oats will yield a different consistency.
  • Room temperature butter is essential for proper creaming and texture.
  • Adding coarse flaky salt on top enhances flavor by providing a sweet-salty contrast.
  • Customize with optional add-ins like chocolate chips, nuts, dried fruit, or M&Ms for variety.
  • Store cookies in an airtight container at room temperature to keep them soft and chewy.
