This Cherry Cheesecake Pretzel Salad is a delightful no-bake dessert featuring a crunchy pretzel crust, a creamy cheesecake layer, and a sweet cherry topping. Perfectly balanced with salty and sweet flavors, this layered dessert is chilled until set, making it ideal for potlucks, gatherings, or any festive occasion.

Ingredients

Crust

  • 3 cups tiny pretzel twists
  • ¼ cup granulated sugar
  • 8 tablespoons unsalted butter, melted

Cheesecake Layer

  • 24 ounces cream cheese (3 packages), room temperature
  • 2 ¼ cups powdered sugar
  • 2 teaspoons vanilla bean paste or vanilla extract

Topping

  • 2 (21-ounce) cans cherry pie filling (or other flavor of choice)
  • 8 ounces whipped topping, thawed according to package directions (optional)

Instructions

  1. Preheat Oven: Preheat your oven to 350°F. Lightly spray the bottom of a 9×13-inch glass baking dish with nonstick cooking spray to prevent sticking.
  2. Crush Pretzels: Place the pretzels into a gallon size zip-top bag and crush them into coarse crumbs using a rolling pin. Alternatively, pulse them gently in a food processor, ensuring you retain some texture without over-processing.
  3. Prepare Crust: Transfer the crushed pretzels into a mixing bowl. Stir in the granulated sugar and melted butter until well combined. Press this mixture evenly into the bottom of the prepared baking dish to form a crust. Bake for 10 minutes, then remove from oven and cool completely on a wire rack.
  4. Make Cheesecake Filling: In the bowl of a stand mixer, beat the room temperature cream cheese on medium speed for 4-5 minutes until light and fluffy. Gradually add powdered sugar and vanilla, continuing to beat for another 3-4 minutes until smooth and creamy.
  5. Assemble the Layers: Spread the cheesecake filling evenly over the cooled pretzel crust. Spoon the cherry pie filling evenly on top of the cheesecake layer. If desired, spread the whipped topping over the cherry layer for an extra creamy finish.
  6. Chill: Cover the baking dish and refrigerate for at least 4 hours to allow the dessert to set properly and the flavors to meld.

Notes

  • Room temperature cream cheese ensures a smooth and lump-free cheesecake layer.
  • For a different flavor, substitute cherry pie filling with blueberry or strawberry pie filling.
  • Do not over-process pretzels to maintain a good crust texture.
  • Whipped topping is optional but adds a light creaminess on top.
  • Ensure the crust is completely cooled before adding the cheesecake layer to prevent melting.
  • Best served chilled and can be stored covered in the refrigerator for up to 3 days.
