Ingredients

Roasted Garlic

  • 2 large garlic bulbs
  • 2 tablespoons olive oil

Dip and Cheese Mixture

  • 1/2 cup chive and onion chip dip
  • 1/4 cup mayonnaise
  • 1/4 cup shredded parmesan cheese
  • 1/4 cup fresh parsley, chopped, divided

Bread and Topping

  • 1 loaf crusty bread
  • 1 1/2 cups shredded mozzarella cheese
  • 6 tablespoons butter

Instructions

  1. Roast the Garlic: Preheat the oven to 400°F. Cut about 1/4 inch off the top of each garlic bulb to expose the cloves, then peel away the loose outer papery layers without separating the cloves. Place each bulb on a sheet of foil, drizzle with olive oil, wrap tightly, and place on a baking sheet. Bake for 1 hour until soft and golden.
  2. Prepare the Bread: Using a sharp knife, cut a crosshatch pattern into the loaf of crusty bread, making approximately 1 inch squares but keeping the bottom crust intact to hold the bread together.
  3. Make the Garlic Dip: In a bowl, combine the chive and onion dip, mayonnaise, parmesan cheese, and half of the chopped parsley. Once the roasted garlic is cool enough to handle, squeeze the bulbs from the bottom to push out the softened cloves. Mash the roasted garlic into the bowl with the dip mixture until well blended.
  4. Assemble the Bread: Spread the roasted garlic dip mixture into all the cracks and crevices of the bread. Then sprinkle the shredded mozzarella cheese evenly over and inside the cuts.
  5. Brush with Parsley Butter: Melt the butter and stir in the remaining chopped parsley. Brush half of this parsley butter mixture generously over the top and into the bread cuts.
  6. Bake the Bread: Place the loaf on a baking sheet, cover loosely with foil, and bake in a preheated 375°F oven for 30 minutes. Then remove the foil and bake for an additional 15 minutes until the cheese is melted and the top is golden brown.
  7. Serve Warm: Brush the remaining parsley butter over the freshly baked bread. Serve immediately while warm, pulling apart the cheesy, garlicky pieces to enjoy.
