These Cheesy Beef Tortilla Pinwheels are a flavorful and fun appetizer or main dish featuring seasoned ground beef, jalapeños, onions, and melted mozzarella cheese rolled in large flour tortillas. Ingredients

Pinwheels

  • 2 lbs 80/20 ground beef
  • 2 jalapeños, diced
  • 1/2 sweet onion, diced
  • 2 tbsp fresh parsley, chopped
  • BBQ seasoning (or salt, pepper, garlic) to taste
  • Large burrito-size flour tortillas
  • Freshly grated mozzarella cheese, amount as desired
  • Light oil or cooking spray for grilling

Chimichurri Sauce

  • 1 cup fresh parsley, chopped
  • 3-4 cloves garlic, minced
  • 2 tbsp red wine vinegar
  • Juice of 1 lemon
  • 1/2 cup olive oil
  • Salt, pepper, red pepper flakes to taste

Instructions

  1. Prepare the beef mixture: In a large bowl, mix together the ground beef, diced jalapeños, diced sweet onion, chopped fresh parsley, and BBQ seasoning until fully combined and evenly distributed.
  2. Assemble the pinwheels: Spread a thin, even layer of the raw beef mixture across each large burrito-size flour tortilla. Generously top the beef layer with freshly grated mozzarella cheese. Carefully roll each tortilla tightly into a log shape.
  3. Slice and prepare for grilling: Cut each rolled tortilla into 1-inch thick pinwheels. Thread the pinwheels onto skewers to keep their shape. Lightly coat the outside of the tortillas with light oil or cooking spray to promote crisping on the grill.
  4. Grill the pinwheels: Preheat the grill to medium-high heat. Place the skewered pinwheels on the grill and cook for 15-20 minutes total, turning every 3-4 minutes to ensure even cooking.
