Ingredients

Roasted Vegetables

  • 1 1/2 pounds root vegetables (sweet potatoes, butternut squash, carrots, or a combination), peeled and cut into 1-inch cubes
  • 3 tablespoons olive oil, divided
  • 1 teaspoon kosher salt, divided
  • Freshly ground black pepper, to taste

Bowl Base and Toppings

  • 3 cups fresh or frozen cauliflower rice
  • 1/2 teaspoon ground turmeric
  • 1 (15.5-ounce) can chickpeas, drained and rinsed
  • 4 ounces feta cheese, drained
  • 1/4 cup pumpkin seeds
  • 1/2 cup coarsely chopped fresh cilantro leaves and tender stems
  • Finely grated zest of 2 medium limes
  • Juice of 2 medium limes, plus more wedges for serving
  • 1 medium avocado, pitted and quartered
  • 1 tablespoon olive oil, plus more for serving

Instructions

  1. Prepare and Roast Vegetables: Preheat the oven to 425°F (220°C). Toss the peeled and cubed root vegetables with 3 tablespoons of olive oil, 1 teaspoon of kosher salt, and freshly ground black pepper. Spread them evenly on a baking sheet and roast for about 25-30 minutes, turning halfway through, until tender and caramelized around the edges.
  2. Cook Cauliflower Rice: While the vegetables roast, heat 1 tablespoon olive oil in a large skillet over medium heat. Add the cauliflower rice and turmeric, stirring well to coat. Cook for 5-7 minutes until the cauliflower is tender but not mushy. Season with a pinch of salt and pepper and set aside.
  3. Sauté Chickpeas: In the same skillet, add the drained chickpeas and sauté for 3-4 minutes until heated through and slightly crisped, seasoning lightly with salt and pepper.
  4. Assemble the Bowl: Divide the cooked cauliflower rice among four bowls. Top each with roasted root vegetables, sautéed chickpeas, crumbled feta cheese, pumpkin seeds, and chopped cilantro.
  5. Add Lime and Avocado: Sprinkle the lime zest over each bowl, then drizzle with fresh lime juice. Add quartered avocado to each bowl and drizzle a little olive oil on top if desired. Serve with additional lime wedges on the side.

  • You can substitute any root vegetables you prefer or have on hand, such as parsnips or beets.
  • For a vegan version, omit the feta cheese or substitute with a plant-based cheese alternative.
  • To enhance flavor, toast the pumpkin seeds lightly before adding to the bowl.
