These Cauliflower Hash Browns are a delicious low-carb alternative to traditional potato hash browns. Made with riced cauliflower, almond flour, and parmesan cheese, they are crispy on the outside and tender on the inside, perfect for a healthy breakfast or snack.

Ingredients

Vegetables

  • 1 large head of cauliflower, roughly chopped into florets
  • 1 yellow onion, diced
  • 1 tablespoon fresh parsley, chopped

Flours and Cheese

  • ½ cup shredded parmesan cheese
  • 5 tablespoons almond flour
  • 1 tablespoon coconut flour

Other Ingredients

  • 2 eggs
  • ½ teaspoon salt
  • 1 teaspoon garlic powder
  • 2 tablespoons olive oil
  • Oil for frying (approximately 2-3 tablespoons)

Instructions

  1. Rice the cauliflower: Pulse cauliflower florets in a food processor until they reach a rice-like consistency. Transfer the riced cauliflower into a clean towel and squeeze out as much moisture as possible to prevent sogginess.
  2. Sauté the onion and cauliflower: In a large skillet over medium heat, warm 2 tablespoons of olive oil. Add the diced onion and cook until translucent, seasoning with ½ teaspoon salt. Add the riced cauliflower and cook, stirring occasionally, until the cauliflower is golden and tender. Remove the skillet from heat.
  3. Mix the batter: In a bowl, beat the 2 eggs. Add the shredded parmesan cheese, almond flour, coconut flour, chopped parsley, and garlic powder. Combine thoroughly with the sautéed cauliflower mixture until a uniform batter forms.
  4. Cook the hash browns: Heat oil in a non-stick skillet over low to medium heat. Once hot, spoon portions of the cauliflower mixture into the pan, flattening each slightly to form patties. Cook for several minutes on each side until golden brown and cooked through.
  5. Serve: Remove the hash browns from the skillet and serve warm with your favorite dipping sauce or condiment.

Notes

  • Be sure to squeeze out as much water as possible from the riced cauliflower for crispier hash browns.
  • You can substitute parmesan cheese with nutritional yeast for a dairy-free alternative.
  • Adjust cooking time to achieve your desired level of crispiness.
  • These hash browns can be reheated in a skillet or air fryer for best texture.
  • Use a non-stick skillet or well-seasoned pan to prevent sticking.
