This cabbage roll soup brings the comforting flavors of traditional baked cabbage rolls into a simple, hearty soup that’s perfect for an easy weeknight dinner. Featuring ground beef, cabbage, carrots, and rice simmered together in a savory tomato and beef broth base, this unstuffed cabbage soup requires less effort but packs all the classic taste in every spoonful.

Ingredients

Main Ingredients

  • 2 teaspoons olive oil
  • Salt and pepper to taste
  • 1 pound ground beef (90% lean)
  • 1 onion, finely diced
  • 2 teaspoons minced garlic
  • 4 cups coarsely chopped green cabbage
  • 2 carrots, peeled, quartered and sliced
  • 4 cups beef broth
  • 3 (8 ounce) cans tomato sauce
  • 1/2 cup uncooked long grain rice
  • 1 bay leaf
  • 3 tablespoons brown sugar
  • 2 tablespoons parsley, chopped (for garnish)

Instructions

  1. Heat the oil and brown the beef: In a large pot over medium-high heat, warm 2 teaspoons of olive oil. Add the ground beef and season with salt and pepper to taste. Cook for about 4-5 minutes, breaking up the meat with a spatula, until nicely browned.
  2. Sauté onions and garlic: Add the finely diced onion and 2 teaspoons minced garlic to the pot. Cook together with the beef for an additional 2-3 minutes until the onions soften and become translucent.
  3. Add vegetables and liquids: Stir in 4 cups chopped green cabbage, 2 sliced carrots, 4 cups beef broth, 3 cans (8 oz each) of tomato sauce, 1/2 cup uncooked long grain rice, 1 bay leaf, and 3 tablespoons brown sugar. Season again with salt and pepper to your liking.
  4. Simmer the soup: Bring the mixture to a gentle simmer. Cover and cook for about 25 minutes, or until the rice is tender and the flavors meld together nicely. Stir occasionally to prevent sticking.
  5. Finish and serve: Remove the bay leaf and discard. Sprinkle the soup with 2 tablespoons chopped parsley for a fresh finish. Serve hot and enjoy.

Notes

  • Recipe adapted from The Wholesome Dish.
  • If you prefer, substitute ground turkey for ground beef for a leaner option.
  • You can use brown rice instead of white rice; however, cooking time will increase by approximately 20 minutes.
