This kid-friendly Bubble Up Pizza Casserole with Biscuits is a fun and easy twist on classic pizza, featuring ground beef, bell peppers, pizza sauce, and gooey mozzarella cheese. Biscuit pieces bubble up throughout the casserole as it bakes, creating a deliciously comforting and savory meal perfect for family dinners.

Ingredients

Meat and Vegetables

  • 1 lb. lean ground beef (96/4)
  • 2 medium bell peppers (red & green, finely diced) (can omit)

Other Ingredients

  • 14 oz. jar pizza sauce
  • 1 (16-oz.) can Pillsbury Grands Biscuits
  • 1.5 cups shredded mozzarella cheese
  • 1.5 oz sliced turkey pepperoni

Instructions

  1. Preheat the oven: Preheat your oven to 375 degrees Fahrenheit. Lightly spray a 9×13-inch baking dish with cooking spray to prevent sticking.
  2. Cook the ground beef: Place the ground beef in a large skillet over medium heat. Cook, crumbling the beef as it cooks, for about 3-4 minutes. Season with salt and pepper to taste, approximately 1/2 teaspoon salt and 1/4 teaspoon black pepper.
  3. Add and sauté bell peppers: Add the finely diced red and green bell peppers to the skillet. Continue to sauté until the peppers soften and the beef is fully cooked with no pink remaining. Drain any excess liquid from the skillet.
  4. Mix in pizza sauce: Stir the jar of pizza sauce into the beef and pepper mixture until evenly combined.
  5. Prepare biscuits: Cut each biscuit into six pieces and spread them evenly into the greased casserole dish.
  6. Layer beef mixture: Spoon the beef and pizza sauce mixture evenly over the biscuit pieces in the dish.
  7. Add cheese and pepperoni: Sprinkle shredded mozzarella cheese on top, then arrange the sliced turkey pepperoni evenly over the cheese.
  8. Bake the casserole: Bake uncovered in the preheated oven for 25-30 minutes, or until the biscuits have puffed up and are cooked through. If the top begins to brown too quickly, cover loosely with foil to prevent burning.
  9. Cool and serve: Allow the casserole to cool for 5-10 minutes before slicing into portions. Serve warm and enjoy!

Notes

  • You can omit bell peppers if your kids prefer a simpler version.
  • Use turkey pepperoni for a slightly healthier option; regular pepperoni works well too.
  • Cover with foil if the casserole browns too quickly during baking.
  • Leftovers can be refrigerated for up to 3 days and reheated in the oven or microwave.
  • Feel free to add extra veggies like mushrooms or onions to the beef mixture.
