Ingredients

Pizza Base

  • 50 g semolina
  • Olive oil for drizzling

Garlic Butter Spread

  • Garlic butter bread spread recipe (refer to notes), approximately 2-3 tbsp per pizza

Toppings

  • 200 g mozzarella cheese
  • 4 medium heirloom tomatoes, sliced
  • 2 tbsp olive oil
  • 2 tsp balsamic vinegar
  • 2 tsp dried basil
  • 1 tsp flaky sea salt
  • 2 tsp crushed black pepper

Instructions

  1. Prepare the Dough: Portion the homemade pizza dough into balls, shape them, and let them proof for 1 hour 30 minutes. Remove from the fridge 20 minutes before baking to come to room temperature.
  2. Preheat the Oven: Set your oven to its highest temperature, preparing a pizza stone or baking tray lined with baking paper approximately 10 inches in diameter. Sprinkle semolina on the baking paper to prevent sticking.
  3. Shape the Dough: Place a dough ball on the semolina-covered baking paper. Drizzle a little olive oil on it and use your fingers to gently stretch the dough to form an 8-9 inch round, leaving about a 1-inch border. Patch any rips by pinching the dough back together.
  4. Apply Garlic Butter and Add Cheese: Generously brush 2-3 tablespoons of garlic butter spread over the entire dough surface, including the edges. Top evenly with 200 g of mozzarella cheese.
  5. Bake the Pizza: Transfer the pizza on the baking paper to the preheated oven using a baking tray or pizza stone. Bake for 10-12 minutes or until the edges are golden, cheese is bubbly, and the bottom is crusty but the center is lightly browned.
  6. Add Tomato Topping: Remove the pizza from the oven. Arrange the sliced heirloom tomatoes on top. Drizzle with 2 tablespoons olive oil, 2 teaspoons balsamic vinegar, and sprinkle 2 teaspoons dried basil, 1 teaspoon sea salt, and 2 teaspoons crushed black pepper evenly over the tomatoes.
  7. Serve: Cut the bruschetta pizza into pieces using a pizza cutter or sharp knife and serve immediately while still hot.
