Ingredients

Phyllo Cups

  • 15 mini phyllo shells (such as Athens brand)

Filling & Toppings

  • 2 tablespoons blackberry jam
  • 2 tablespoons honey
  • 3 ounces brie, skin removed and cut into 1/2” cubes
  • 15 blackberries, rinsed and dried
  • 2-3 sprigs fresh thyme leaves, for garnish

Instructions

  1. Preheat Oven: Preheat your oven to 325°F (163°C) to prepare for baking the phyllo cups.
  2. Prepare Phyllo Cups: Arrange the mini phyllo shells evenly on a baking sheet. Place a small dab of blackberry jam and honey inside each shell to create a sweet base layer.
  3. Add Brie: Top each jam and honey filled shell with a 1/2 inch cube of skinless brie cheese to ensure even melting.
  4. Bake: Place the tray in the oven and bake for 6-8 minutes, or just until the brie has melted and the phyllo shells turn a very light golden brown. This step requires close attention to avoid overbaking.
  5. Garnish and Serve: Remove the cups from the oven. Immediately top each with a fresh blackberry and a few thyme leaves. Optionally, drizzle additional honey on top for extra sweetness. Serve these warm for the best flavor and texture.

  • Remove the skin from the brie before cutting to avoid chewy texture.
  • Ensure phyllo shells are thawed completely if previously frozen to achieve crispness during baking.
