Ingredients

Bread and Butter

  • 4 sturdy slices sourdough bread (do not use soft bread)
  • 2 tablespoons butter

Fillings

  • ⅓ cup Sauvignon Blanc
  • 8 ounces chilled brie, rind removed, cut into thin slices
  • 1 medium honeycrisp apple, thinly sliced
  • ½ cup whole berry cranberry sauce

Instructions

  1. Prepare the Bread: Butter one side of each of the four slices of sourdough bread thoroughly. Then, brush the other side of each slice lightly with Sauvignon Blanc to add a subtle fruity note.
  2. Heat the Skillet: Place a large skillet over medium-high heat to preheat it. This will ensure an even sear on the bread once the sandwiches hit the pan.
  3. Assemble the Sandwiches: Lay two slices of the buttered bread butter-side-down in the skillet. Top each with a generous layer of thinly sliced brie, followed by the apple slices, then spoon over the whole berry cranberry sauce for a perfect blend of flavors.
  4. Top and Cover: Place the remaining two slices of bread on top of the fillings, with the buttered side facing up. Cover the skillet with a lid to help the cheese melt and to retain heat evenly.
  5. Cook Sandwiches: Reduce heat to medium and let the sandwiches cook undisturbed on one side. When you notice the cheese beginning to melt and the edges browning, remove the lid and gently use a spatula to check the underside. Once golden brown, carefully flip each sandwich to toast the other side until it is also golden brown and the cheese has fully melted.
