Ingredients

Crust and Topping

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, cold and cubed
  • 1 large egg
  • 1 teaspoon vanilla extract

Blueberry Filling

  • 4 cups fresh blueberries
  • 1/2 cup granulated sugar
  • 2 tablespoons cornstarch
  • 1 tablespoon lemon juice

Instructions

  1. Preheat and Prepare Pan: Preheat your oven to 375°F (190°C) and grease a 9×13-inch baking pan to ensure the bars do not stick.
  2. Mix Dry Ingredients for Crust: In a large mixing bowl, combine the flour, 1 cup of sugar, baking powder, and salt, mixing them thoroughly.
  3. Cut in Butter: Add the cold, cubed butter to the dry ingredients and use a pastry cutter or your fingers to incorporate the butter until the mixture resembles coarse crumbs.
  4. Add Egg and Vanilla: In a small bowl, whisk together the egg and vanilla extract. Pour this into the crumb mixture and stir until a crumbly dough forms.
  5. Form Bottom Crust: Press about two-thirds of this dough evenly into the bottom of the prepared baking pan to create the base layer.
  6. Prepare Blueberry Filling: In another bowl, mix the fresh blueberries with 1/2 cup sugar, cornstarch, and lemon juice until berries are evenly coated.
  7. Spread Filling: Evenly layer the blueberry mixture over the pressed dough in the baking pan.
  8. Add Crumb Topping: Crumble the remaining one-third dough over the blueberry layer to form the crumbly top.
  9. Bake: Place the pan in the oven and bake for 45-50 minutes until the topping is golden brown and the blueberry filling is bubbling.
  10. Cool and Slice: Remove from the oven and let the bars cool completely in the pan before slicing into squares.
  11. Serve: Enjoy the bars as is or optionally dust with powdered sugar for added sweetness.

Notes

  • Use fresh blueberries for the best texture and flavor; frozen can be substituted but may alter moisture content.
  • Ensure butter is cold when cutting into flour for a tender, crumbly texture.
  • Allow bars to cool completely to set filling and prevent sogginess when slicing.
  • These bars can be stored covered in the refrigerator for up to 4 days.
  • Optional: Dust with powdered sugar or serve with whipped cream or vanilla ice cream for an extra special treat.
