This Blueberry Baked Oatmeal is a wholesome and comforting breakfast casserole that features hearty oats, fresh blueberries, and a touch of warm cinnamon. Easy to prepare the night before, it’s perfect for a nutritious morning meal that’s both naturally sweetened with maple syrup and packed with fiber and protein. Walnuts add a delightful crunch, while the dish bakes to a golden, crisp-topped perfection.

Ingredients

Dry Ingredients

  • 2 cups old fashioned oats
  • 1 1/2 teaspoons cinnamon
  • ½ teaspoon baking powder
  • 1/4 teaspoon salt

Wet Ingredients

  • 3/4 cup milk
  • 1 cup unsweetened applesauce
  • 2 large eggs
  • 1/4 cup maple syrup (OR brown sugar)
  • 2 teaspoons pure vanilla extract

Add-ins

  • 1/4 cup chopped walnuts (OR pecans OR sliced almonds)
  • 2 cups blueberries (fresh or frozen)

Instructions

  1. Mix the ingredients: In a large bowl, combine the oats, milk, unsweetened applesauce, chopped walnuts, eggs, maple syrup, vanilla extract, cinnamon, baking powder, and salt. Stir well until all ingredients are evenly incorporated.
  2. Layer in a casserole dish: Lightly grease a 7×11 inch rectangular baking dish. Spread half of the oat mixture evenly on the bottom of the dish. Sprinkle approximately three-quarters of the blueberries over the oat layer. Carefully spread the remaining oat mixture on top, smoothing the surface, then scatter the remaining blueberries on top. Optionally, add some extra walnuts for crunch.
  3. Chill the dish: Cover the baking dish with a lid or wrap and refrigerate overnight. This allows the oats to soak and flavors to meld. If you prefer to bake immediately, you may do so without chilling, but chilling improves texture and flavor.
  4. Bake the dish: The next morning, preheat your oven to 350°F (175°C). Remove the chilled baking dish from the refrigerator and place it in the oven. Bake for 30 to 35 minutes or until the baking oatmeal is set and the top is golden brown. Let it rest for 5 minutes on a cooling rack before slicing and serving warm.

Notes

  • You can substitute eggs with a flax or chia egg for a vegan option.
  • Fresh or frozen blueberries both work well in this recipe.
  • If you prefer to bake immediately, you can skip the chilling step but the texture might be different.
  • Feel free to swap walnuts for pecans or sliced almonds as preferred.
