Ingredients

Chicken Coating

  • 1 cup all-purpose flour
  • 2 pounds chicken tenders
  • 2 cups panko bread crumbs
  • 3 large eggs
  • Kosher salt, to taste
  • Freshly ground black pepper, to taste

BBQ Lime Sauce

  • 1 cup barbecue sauce
  • 1/2 cup packed brown sugar
  • 2 limes, juiced
  • 1 teaspoon garlic powder

Optional Serving

  • Ranch dressing, for serving

Instructions

  1. Preheat and coat chicken: Preheat your oven to 425°F (220°C). In a large resealable plastic bag, combine the all-purpose flour and chicken tenders, then shake the bag to fully coat the chicken pieces in the flour.
  2. Prepare dredging station: Set up your dredging station by placing panko bread crumbs in one shallow bowl and whisking together the eggs with 2 tablespoons of water in another shallow bowl. Dip each floured chicken tender into the egg mixture, then coat thoroughly with panko bread crumbs. Arrange the coated chicken pieces on a prepared baking sheet and sprinkle generously with kosher salt and freshly ground black pepper.
  3. Bake the chicken: Place the baking sheet in the preheated oven and bake the chicken tenders for 20 to 25 minutes, or until they are golden brown and crispy.
  4. Make the BBQ lime sauce: While the chicken is baking, combine barbecue sauce, brown sugar, lime juice, and garlic powder in a small saucepan over low heat. Whisk and simmer the sauce for about 5 minutes until it thickens slightly and the flavors meld.
  5. Toss chicken in sauce and serve: Once the chicken is baked, transfer the tenders to a large bowl and toss them in the prepared barbecue lime sauce until each piece is well coated. Serve immediately with ranch dressing on the side if desired.

  • For extra crispiness, allow the coated chicken tenders to rest in the refrigerator for 15 minutes before baking.
