This Basil-Peach Sorbet recipe combines sweet, ripe peaches with refreshing basil-infused simple syrup to create a cool, smooth, and vibrant frozen treat perfect for hot summer days or as a light dessert.

Ingredients

Fruit and Syrups

  • 2.2 lb (1 kg) peaches, fresh or frozen
  • 1/4 cup white corn syrup
  • 3/4 cup basil-infused simple syrup (see note)
  • 1/4 cup granulated white sugar
  • 1/2 cup water

Instructions

  1. Prepare the peaches: Using frozen peaches that are slightly thawed, place 1 kg of them into a large heavy-duty blender or food processor to ensure the best texture for your sorbet.
  2. Add liquids and sugar: Pour in 1/2 cup water, 1/4 cup white corn syrup, 1/4 cup granulated sugar, and 3/4 cup basil-infused simple syrup to the peaches in the blender.
  3. Blend until smooth: Pulse the mixture on high speed until the fruit and syrups combine into a smooth, cold sorbet base. Using slightly thawed frozen peaches helps achieve a smooth texture quickly.
  4. Freeze the sorbet: Transfer the blended mixture into a ceramic or lined metal loaf pan and spread it out evenly with a spatula. Freeze for 3-4 hours to solidify.
  5. Serving preparation: If frozen for longer than 4 hours, allow the sorbet to soften at room temperature for a few minutes before scooping and serving to ensure the best texture.
