Tender chunks of seasoned chicken are skewered and grilled to perfection, then brushed with a flavorful bang bang sauce made from mayonnaise, sriracha, honey, and rice vinegar. Garnished with green onions and sesame seeds, these skewers offer a perfect balance of heat, sweetness, and tang.

Ingredients

Chicken and Seasonings

  • 1.5 lbs boneless, skinless chicken breasts or thighs (cut into 1 to 1.5-inch chunks)
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder (optional)
  • ½ teaspoon smoked paprika (optional)
  • 8-10 skewers (wooden or metal; soak wooden skewers in water if using)

Bang Bang Sauce

  • ½ cup mayonnaise (or use ¼ cup mayo + ¼ cup Greek yogurt for a lighter option)
  • 2 tablespoons sriracha (adjust to taste)
  • 1 tablespoon honey (or sugar)
  • 1 tablespoon rice vinegar (or lime juice)
  • 1 tablespoon chopped green onions
  • 1 teaspoon sesame seeds

Instructions

  1. Prep the chicken: Cut the chicken into 1 to 1.5-inch chunks. Pat them dry to ensure they grill well without steaming. Season the pieces evenly with salt, black pepper, garlic powder, and smoked paprika for depth of flavor. Toss the seasoned chicken in olive oil to help lock in moisture and prevent sticking to the grill.
  2. Make the sauce: In a small bowl, combine the mayonnaise, sriracha, honey, and rice vinegar. Stir the mixture until smooth and well combined. Adjust the spice level by adding more sriracha or balance the sweetness by increasing honey according to your taste preference.
  3. Assemble the skewers: Thread the chicken chunks onto the skewers. If desired, alternate chicken pieces with vegetables of your choice such as bell peppers or onions for added flavor and color.
  4. Grill the chicken: Preheat your grill to medium-high heat. Place the skewers on the grill and cook for 10 to 12 minutes, turning occasionally to ensure even cooking and beautiful grill marks. Cook until the chicken is fully cooked internally and slightly charred on the outside.
  5. Add the sauce: During the last few minutes on the grill, brush the skewers generously with the prepared bang bang sauce. Alternatively, you can remove the chicken from the grill and drizzle or brush the sauce on immediately before serving.
