Ingredients

For the Crust

  • 1 1/2 cups finely crushed Nilla Wafers
  • 4 Tbsp. melted unsalted butter
  • Pinch kosher salt

For the Cheesecake Layer

  • 2 (8-oz.) blocks cream cheese, softened
  • 3/4 cup granulated sugar
  • 2 cups heavy cream
  • 1 tsp. pure vanilla extract
  • 1 (3.4-oz.) package instant vanilla pudding mix
  • 1 3/4 cups whole milk

Additional Ingredients

  • 5 or 6 large ripe bananas, sliced
  • 48 Nilla wafers, plus more crushed for garnish
  • Cool Whip or whipped cream, for topping

Instructions

  1. Prepare the Crust: In a medium mixing bowl, combine the finely crushed Nilla Wafers, melted unsalted butter, and a pinch of kosher salt. Stir until the mixture resembles wet sand. Press this mixture evenly into the bottom of a 9×13 inch dish to form the crust layer. Chill in the refrigerator to set while preparing the filling.
  2. Make the Cheesecake Filling: In a large mixing bowl, beat the softened cream cheese and granulated sugar until smooth and creamy using an electric mixer. In a separate bowl, whisk together the instant vanilla pudding mix with the whole milk until thickened. In another bowl, whip the heavy cream and vanilla extract until stiff peaks form. Gently fold the whipped cream and the pudding mixture into the cream cheese mixture until fully combined, creating a smooth cheesecake-like filling.
  3. Assemble the Lasagna: Remove the crust from the refrigerator. Spread a layer of the cheesecake filling evenly over the crust. Next, place a layer of sliced ripe bananas over the filling, followed by a layer of whole Nilla Wafers. Repeat layering with remaining cheesecake filling, banana slices, and a final layer of Nilla Wafers, finishing with another layer of the filling.
  4. Top and Chill: Spread Cool Whip or whipped cream over the top layer of filling for a light, creamy finish. Garnish with crushed Nilla Wafers for added texture and decoration. Cover the dessert and refrigerate for at least 4 hours or overnight to allow the layers to set and flavors to meld.
