Ingredients

Flatbread Dough

  • 1 1/4 cups all-purpose flour, plus more for rolling
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup Greek yogurt

Toppings

  • 1/2 cup mozzarella cheese
  • 1 1/4 cups strawberries, sliced
  • Salt and pepper, to taste
  • 1/2 cup feta cheese, crumbled
  • 8 basil leaves, julienned
  • 1/4 cup balsamic glaze

Instructions

  1. Preheat Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper to prevent sticking and for easy cleanup.
  2. Make the Flatbread Dough: In a large bowl, mix together the flour, baking powder, baking soda, and salt. Add the Greek yogurt and stir with a wooden spoon until the mixture forms a shaggy and sticky dough. Transfer the dough to a well-floured surface. Sprinkle additional flour over it and fold the dough on itself a few times to bring it together, then shape it into a ball.
  3. Shape the Flatbread: Place the dough ball onto the parchment-lined baking sheet. Using your hands, press and shape it into a rectangle about 1/4 inch thick, ensuring an even thickness all around.
  4. Add Mozzarella and Seasoning: Sprinkle the mozzarella evenly over the flatbread dough, leaving a small border around the edges. Season with salt and pepper according to your taste.
  5. Add Strawberries and Feta: Distribute the sliced strawberries and crumbled feta cheese evenly across the top of the flatbread.
  6. Bake: Place the baking sheet in the preheated oven and bake for 15 to 20 minutes, or until the crust is golden brown and cooked through.
  7. Finish and Serve: Remove the flatbread from the oven. Sprinkle the julienned basil leaves over the top and drizzle with balsamic glaze. Slice and serve warm or at room temperature.
