A simple and flavorful baked feta pasta recipe that combines juicy roasted grape tomatoes with creamy baked feta cheese, Italian seasoning, and fresh basil, tossed with warm bow tie pasta for a delicious, comforting meal.

Ingredients

Produce

  • 2 ½ cups grape tomatoes, washed and dried
  • ¼ cup chopped fresh basil

Dairy

  • 1-8 oz brick of Feta cheese

Pantry

  • 1 teaspoon Italian seasoning
  • ½ teaspoon salt
  • 5 tablespoons olive oil
  • 12 oz bow tie pasta, cooked, drained, and kept warm

Instructions

  1. Preheat and prepare tomatoes: Preheat your oven to 350°F. Add the grape tomatoes to a medium-sized baking dish, evenly spreading them out.
  2. Add feta cheese: Place the whole 8 oz brick of feta cheese in the center of the tomatoes in the baking dish.
  3. Drizzle initial olive oil: Pour 3 tablespoons of olive oil evenly over both the tomatoes and the feta cheese, ensuring good coverage.
  4. Season: Sprinkle 1 teaspoon of Italian seasoning and ½ teaspoon of salt over the cheese and tomatoes to add aroma and flavor.
  5. Finish olive oil drizzle: Drizzle the remaining 2 tablespoons of olive oil over the feta cheese to keep it moist as it bakes.
  6. Bake: Place the baking dish in the preheated oven and bake for 30-35 minutes, until the tomatoes have burst and the feta cheese is softened and slightly golden.
  7. Combine and add basil: Remove the dish from the oven, then stir the softened tomatoes and feta together until well combined. Add the chopped fresh basil and mix to distribute the flavor.
  8. Toss with pasta and serve: Add the cooked, drained, and warm bow tie pasta directly into the tomato and feta mixture. Stir until the pasta is evenly coated and serve hot.

Notes

  • For a creamier sauce, add a splash of pasta cooking water when mixing the pasta with the baked tomatoes and feta.
  • You can substitute Italian seasoning with a mix of dried oregano and thyme if desired.
  • This dish pairs well with a crisp green salad or crusty bread to soak up extra sauce.
  • Use gluten-free pasta to make this suitable for gluten free diets.
  • Leftovers reheat well in the microwave or on stovetop with a splash of olive oil or water.
