Delightful and flaky apple turnovers featuring a spiced apple and raisin filling wrapped in crisp phyllo dough. This apple turnover recipe offers a perfect balance of warm cinnamon, sweet golden raisins, and tender apples encased in crispy layers, ideal for a comforting dessert or breakfast treat.

Ingredients

Filling

  • 1 pound gala apples (peeled, cored, and chopped, about 3 large apples)
  • 3 tablespoons golden raisins
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon Diamond Crystal kosher salt
  • 2 tablespoons packed brown sugar
  • 1 teaspoon cornstarch

Pastry

  • 8 sheets phyllo dough, 13 x 9 inches (thawed)
  • Olive oil spray
  • Powdered sugar (for serving)

Instructions

  1. Preheat and Prepare Baking Sheet: Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper to prevent sticking and to ensure easy cleanup.
  2. Cook Apple Filling: In a nonstick skillet over medium heat, combine the peeled and chopped apples, golden raisins, brown sugar, ground cinnamon, and kosher salt. Cover and cook until the apples just begin to soften, about 15 minutes. Then transfer this mixture to a large bowl.
  3. Thicken Filling: Stir the cornstarch into the warm apple mixture thoroughly so that the filling is evenly coated, which will help it to thicken as it cools and bakes.
  4. Prepare Phyllo Dough: Remove the phyllo dough from its packaging and keep it covered with a damp kitchen towel to prevent it from drying out while you work.
  5. Layer and Cut Phyllo: Place one sheet of phyllo dough on your cutting board and lightly spray it with olive oil. Top with another sheet and spray again. Halve the stacked sheets lengthwise to create two long, narrow stacks for turnovers.
  6. Assemble Turnovers: Spoon about 3 tablespoons of the apple filling at one end of a phyllo stack. Fold one corner of the phyllo over the filling to form a triangle. Continue folding the triangle like a flag all the way down to enclose the filling completely. Spray the top of each turnover lightly with olive oil and transfer it to the baking sheet with the seam side down. Repeat with the remaining phyllo sheets and filling.
  7. Bake: Place the baking sheet in the oven and bake the turnovers until the phyllo is golden brown and crisp, approximately 30 to 32 minutes.
  8. Cool and Serve: Allow the homemade apple turnovers to cool on the baking sheet for at least 10 minutes before dusting them lightly with powdered sugar. Serve warm or at room temperature.

Notes

  • Keep phyllo dough covered with a damp towel at all times to prevent drying and tearing.
  • Adjust sweetness by adding more or less brown sugar depending on your taste and apple sweetness.
  • Golden raisins add a lovely texture and sweetness, but you can substitute with regular raisins or dried cranberries.
  • For a dairy-free recipe, use olive oil spray as directed and avoid adding butter to the dough.
  • These turnovers can be stored in an airtight container at room temperature for up to 2 days or frozen for longer storage.
