This Apple Slaw is a refreshing and crunchy side dish, combining the natural sweetness of gala apples with tangy Greek yogurt dressing, shredded cabbage, and a delightful mix of almonds, dried cranberries, and optional feta cheese. It’s perfect for a quick, healthy, and colorful addition to any meal.

Ingredients

Dressing

  • 3/4 cup plain Greek yogurt (I recommend using Fage, other brands may be too thin)
  • 1/4 cup mayonnaise
  • 1/4 cup honey
  • 2 Tbsp apple cider vinegar
  • Salt and freshly ground black pepper, to taste

Slaw

  • 1 small cabbage, shredded (6 – 7 cups packed, approximately 16 oz chopped)
  • 1 1/2 cups matchstick carrots
  • 2 large gala apples, sliced into matchsticks (about 3 cups)
  • 1/2 cup sliced green onions
  • 3/4 cup sliced almonds
  • 3/4 cup dried cranberries
  • 3/4 cup crumbled feta cheese, blue cheese, or shredded sharp cheddar (optional)

Instructions

  1. Prepare the dressing: In a mixing bowl, whisk together the Greek yogurt, mayonnaise, honey, and apple cider vinegar until smooth and well combined. Season with salt and freshly ground black pepper to taste.
  2. Combine the slaw ingredients: In a large bowl, toss together the shredded cabbage, matchstick carrots, gala apples, sliced green onions, sliced almonds, dried cranberries, and crumbled cheese if using.
  3. Toss with dressing: Pour the prepared dressing over the cabbage mixture and toss thoroughly to evenly coat all ingredients. For the best flavor and texture, serve the slaw within a few hours of preparation.

Notes

  • Use firm and crisp gala apples for the best texture.
  • Feta cheese adds a salty tang, but you can substitute with blue cheese or sharp cheddar or omit altogether for a dairy-free version.
  • This slaw is best served fresh but can be refrigerated for up to 24 hours.
  • Adjust the amount of honey based on your preferred level of sweetness.
  • For a nuttier flavor, toast the sliced almonds lightly before adding.
