Ingredients

Dry Ingredients

  • 2 cups (250 g) all-purpose flour
  • 1 ½ cups (300 g) granulated sugar
  • 2 teaspoons baking powder
  • 2 teaspoons apple pie spice
  • ½ teaspoon kosher salt

Wet Ingredients

  • 1 ¼ cups apple cider (or apple juice)
  • 1 large egg, room temperature
  • 2 tablespoons unsalted butter, melted
  • 1 tablespoon vanilla extract

Coating

  • ¼ cup apple cider
  • ½ cup (100 g) granulated sugar
  • 2 teaspoons apple pie spice

Instructions

  1. Preheat oven and prepare loaf pan: Preheat your oven to 350°F (175°C). Spray an 8 ½ x 4 ½-inch loaf pan with nonstick cooking spray to prevent sticking.
  2. Combine dry ingredients: In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, apple pie spice, and kosher salt until well blended.
  3. Whisk wet ingredients: In a separate bowl, whisk the apple cider, egg, melted butter, and vanilla extract until smooth and combined.
  4. Mix wet and dry ingredients: Pour the wet ingredients into the bowl with the dry mixture. Stir gently with a spatula until just combined. Be careful not to overmix; the batter should be slightly runny.
  5. Pour batter into pan: Transfer the batter evenly into the prepared loaf pan, smoothing the top gently.
  6. Bake the bread: Place the loaf pan in the preheated oven and bake for 65-75 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs and the top is golden brown.
  7. Cool slightly in pan: Remove the loaf from the oven and allow it to cool in the pan for about 10 minutes.
  8. Brush with apple cider: While the bread is still warm, brush or pour the ¼ cup of apple cider evenly over the top of the loaf still in the pan to add moisture and flavor.
  9. Prepare sugar-spice coating: In a small bowl, mix the ½ cup granulated sugar with 2 teaspoons of apple pie spice until combined.
  10. Coat the bread: Carefully remove the bread from the pan and place it on a large piece of parchment paper. Sprinkle the sugar-spice mixture liberally over the bread, rotating it to coat all sides evenly.
  11. Cool completely before slicing: Allow the bread to cool completely before slicing to ensure clean cuts and proper texture.

Notes

  • Apple pie spice typically contains cinnamon, nutmeg, allspice, and cloves; you can substitute with a blend if you don’t have it on hand.
  • You can use fresh apple cider or apple juice; fresh cider will yield a richer flavor.
  • Ensure the egg is at room temperature for better incorporation.
  • Do not overmix the batter; overworking will lead to a tougher bread.
  • The sugar-spice coating gives a donut-like finish, so be generous for best results.
  • Store leftovers in an airtight container at room temperature for up to 3 days or refrigerate for up to a week.
