Ingredients

Stuffed Chicken

  • 2 boneless, skinless chicken breasts
  • 1 honeycrisp apple, cored and thinly sliced
  • 1 wedge of brie cheese, sliced
  • Salt and pepper, to taste

Maple Glaze

  • 2 tablespoons maple syrup
  • 1 teaspoon Dijon mustard
  • ¼ teaspoon dried thyme
  • 1 garlic clove, minced

Instructions

  1. Prepare the Glaze: In a small bowl, whisk together the maple syrup, Dijon mustard, dried thyme, and minced garlic until well combined. Set aside to allow the flavors to meld.
  2. Preheat Oven: Preheat your oven to 400°F (204°C) to ensure it reaches the proper temperature for baking the chicken.
  3. Prepare the Chicken: Place the chicken breasts flat on a cutting board and cut a slit into each one about ¾ of the way through to create a pocket for the stuffing. Season both sides generously with salt and pepper to enhance flavor.
  4. Sear the Chicken: Heat a large cast iron skillet over medium-high heat with a splash of olive oil. Once hot, sear the chicken breasts for 2-3 minutes per side until golden brown. Remove the chicken from the pan.
  5. Stuff the Chicken: Carefully stuff each chicken breast pocket with the thinly sliced apples and brie cheese. If desired, secure the opening with toothpicks to prevent the filling from spilling out during cooking.
  6. Glaze and Bake: Return the stuffed chicken breasts to the cast iron skillet. Brush the maple glaze generously over the top of each breast. Transfer the skillet to the preheated oven and bake for 20-22 minutes, or until the internal temperature of the chicken reaches 165°F (74°C) and is thoroughly cooked.
  7. Serve: Remove the skillet from the oven. Let the chicken rest for a few minutes before serving immediately, allowing the juices to redistribute for optimal flavor and moisture.

Notes

  • If you do not have a cast iron skillet, you can sear the chicken in any skillet and then transfer the breasts to a baking dish to finish baking in the oven.
  • For extra flavor, double the maple glaze recipe. Use half for brushing during cooking and set the other half aside to serve as a sauce alongside the chicken.
