Crispy and golden homemade potato chips made effortlessly in the air fryer. These thinly sliced potato chips are soaked, dried, and air-fried to perfection, offering a healthier alternative to traditional frying while delivering satisfying crunch and flavor. Seasoned simply with sea salt and optionally garnished with fresh parsley, they make a perfect snack or side dish for any occasion.

Ingredients

Potatoes

  • 2 large potatoes

Seasoning & Oil

  • Olive oil-flavored cooking spray
  • 1/2 teaspoon sea salt
  • Minced fresh parsley, optional

Instructions

  1. Prep the potatoes: Wash and peel the potatoes, then slice them very thinly using a mandoline slicer or vegetable peeler for best results.
  2. Soak the slices: Place the thin potato slices in a large bowl, cover with ice water and soak for 15 minutes. Drain, refill with fresh ice water, and soak for another 15 minutes to remove excess starch for crispier chips.
  3. Dry the potato slices: Drain the potatoes thoroughly and spread them out on clean towels. Pat them dry completely to remove all moisture; this step is crucial for achieving a crunchy texture.
  4. Preheat the air fryer: Set your air fryer to 360°F (182°C) and allow it to preheat until ready.
  5. Air-fry the chips: Lightly spray a single layer of potato slices on a greased air-fryer basket tray with olive oil-flavored cooking spray and sprinkle with sea salt. Cook for 15 to 17 minutes, turning and stirring every 5 to 7 minutes to ensure even crisping and golden color. Repeat in batches until all slices are cooked.
  6. Finish and serve: Remove the chips from the air fryer, optionally sprinkle with minced fresh parsley for a burst of color and mild herb flavor, and serve immediately for the best crunch.

Notes

  • For best results, slice potatoes as thin as possible to ensure quicker and more even cooking.
  • Thicker slices require longer cooking and won’t be as crispy.
  • Drying the potato slices thoroughly is essential to avoid soggy chips.
  • If chips fly around inside the air fryer due to the fan, pause, open the basket and shake to redistribute the chips and prevent burning.
  • Use fresh parsley for a fresh herbal aroma and added visual appeal if desired.
