Ingredients

Meatballs

  • 2 Tbsp olive oil
  • 3 cloves garlic, minced
  • 1 Tbsp minced chives (optional but recommended)
  • 1 tsp kosher salt
  • 1 tsp onion powder
  • 3/4 tsp black pepper
  • 1/2 tsp smoked paprika
  • 2 large eggs, lightly beaten
  • 2 lbs ground chicken (or ground turkey)
  • 1 cup panko breadcrumbs
  • 1/2 cup shredded Parmesan cheese

Firecracker Sauce

  • 3/4 cup packed light brown sugar
  • 1/2 cup hot sauce (Franks recommended)
  • 2 Tbsp apple cider vinegar
  • 1 Tbsp light soy sauce
  • 1/2 tsp garlic powder
  • 1/2 tsp kosher salt (adjust if using regular soy sauce)
  • 1/2 – 1 tsp red pepper flakes

Garnish

  • 2 Tbsp minced parsley (optional)

Instructions

  1. Make firecracker sauce: In a small saucepan over medium heat, combine brown sugar, hot sauce, apple cider vinegar, light soy sauce, garlic powder, kosher salt, and red pepper flakes. Stir frequently until the sauce is fully combined and thickened, approximately 7-10 minutes. Remove from heat and let cool. If the sauce becomes too thick as it cools, add water a teaspoon at a time until desired consistency is reached.
  2. Prepare meatball mixture: In a large mixing bowl, whisk together olive oil, minced garlic, chives, kosher salt, onion powder, black pepper, smoked paprika, and lightly beaten eggs until well combined. Add ground chicken, panko breadcrumbs, and shredded Parmesan cheese. Gently mix with your hands to combine ingredients, taking care not to overmix to keep meatballs tender.
  3. Preheat air fryer: Set air fryer to 400°F and allow it to preheat while shaping meatballs.
  4. Form meatballs: Use a cookie scoop or your hands to form the mixture into approximately 2-inch diameter meatballs.
  5. Prepare air fryer basket: Lightly spray the air fryer basket with a nonstick oil spray, such as olive oil or avocado oil spray.
  6. Air fry meatballs – First side: Arrange meatballs in a single layer inside the air fryer basket, being careful not to overcrowd. Depending on basket size, cook in batches if necessary. Spray tops of meatballs with nonstick spray. Air fry at 400°F for 10 minutes.
  7. Flip meatballs and finish air frying: Using tongs, carefully turn each meatball over. Spray tops again with oil spray. Continue cooking for an additional 5-7 minutes until an instant-read thermometer inserted into the center reads 165°F.
  8. Glaze meatballs: Remove cooked meatballs from the air fryer basket one at a time and dip each into the prepared firecracker sauce, coating thoroughly. Return glazed meatballs to the air fryer basket.
  9. Final air fry to set glaze: Air fry glazed meatballs at 400°F for an additional 2 minutes to set the sauce.
  10. Serve: Carefully remove meatballs from the air fryer and serve immediately, drizzled with any remaining firecracker sauce. Garnish with minced parsley if desired.
