Tender chicken, creamy chicken soup, and cheesy goodness combine with nutritious broccoli and fluffy rice all cooked in a single skillet, minimizing cleanup while delivering maximum flavor.

Ingredients

Main Ingredients

  • 1 tablespoon olive oil
  • 1 small onion, chopped
  • 2 chicken breasts, cut into small cubes
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • 4 cloves garlic, minced
  • ¾ cup uncooked rice
  • 1 can (10 ounces) cream of chicken soup
  • 2 cups low sodium chicken broth (plus extra if needed)
  • 2 cups broccoli florets
  • 1 cup cheddar cheese (divided)
  • 1 tablespoon fresh parsley, chopped

Instructions

  1. Cook the onion and chicken: Heat olive oil in a large ovenproof skillet over medium heat. Add chopped onion and cubed chicken. Cook for about 5 minutes until the chicken is no longer pink and starts to brown. Season with salt and black pepper. Stir in minced garlic and cook for another 30 seconds until fragrant.
  2. Add the rice and liquids: Stir in the uncooked rice, cream of chicken soup, and 2 cups of chicken broth. If needed, additional chicken broth can be added later to ensure the rice cooks fully.
  3. Cook the rice: Bring the mixture to a boil. Once boiling, reduce the heat to medium, cover the skillet, and let cook for about 15 minutes, stirring occasionally. Taste and adjust seasoning if necessary.
  4. Finish with broccoli and cheese: Add the broccoli florets and half of the cheddar cheese to the skillet. Cook uncovered for an additional 2 minutes, allowing the broccoli to soften slightly.
  5. Broil cheese topping: Sprinkle the remaining cheddar cheese evenly over the top. Place the skillet under the broiler for a couple of minutes until the cheese melts and starts to brown lightly.
  6. Garnish and serve: Remove from the broiler, sprinkle with fresh chopped parsley, and serve immediately.

Notes

  • You can substitute cream of chicken soup with cream of mushroom or cream of celery for a different flavor.
  • If you prefer, use brown rice but increase cooking time and broth as needed.
  • For added flavor, consider seasoning chicken with paprika or Italian seasoning before cooking.
  • Ensure the skillet is oven-safe before placing it under the broiler.
  • Leftovers can be refrigerated for up to 3 days and reheated gently on the stovetop or microwave.
