Ingredients

Sauce

  • 1/4 cup sesame paste (or tahini)
  • 1/4 cup warm water
  • 3 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon rice vinegar
  • 1 clove garlic, grated
  • Sriracha and sugar to taste

Main

  • 6-8 ounces stir fry noodles, Chinese egg noodles, or linguine
  • 2 cups edamame, cooked
  • 2 cucumbers, diced
  • 1 lb. chicken breast, cooked and diced (optional)
  • Sesame seeds, for garnish

Instructions

  1. Make the sauce: Whisk together the sesame paste, warm water, soy sauce, sesame oil, rice vinegar, grated garlic, Sriracha, and sugar in a bowl until smooth. Alternatively, blend in a food processor or shake in a jar for better emulsification.
  2. Cook the noodles: Boil the noodles according to package instructions but drain them a few minutes earlier to keep them slightly firm. Rinse under cold water if the noodles feel sticky to remove excess starch.
  3. Toss noodles with sauce: Mix the drained noodles with about half of the prepared sesame sauce to coat evenly.
  4. Assemble the bowls: Divide the sauced noodles among serving containers or bowls. Evenly distribute the cooked edamame, diced cucumbers, and cooked chicken (if using) on top.
  5. Add finishing touches: Drizzle the remaining sesame sauce over the bowls and sprinkle generously with sesame seeds for garnish.
  6. Storage and serving: Store the assembled bowls in the refrigerator for up to 3-4 days. Serve chilled or warmed as desired. Perfect for meal prep and quick meals throughout the week.
