These golden zucchini cheese patties are a delightful way to enjoy the goodness of zucchini paired with the rich flavors of Parmesan and Mozzarella cheeses. Crispy on the outside and tender on the inside, these patties make a fantastic appetizer or side dish.

Ingredients

Zucchini Patties:

  • 2 cups grated zucchini
  • 2 eggs, beaten
  • 1/4 cup chopped onion
  • 1/2 cup all-purpose flour
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup shredded Mozzarella cheese
  • Salt to taste
  • 2 tablespoons vegetable oil

Instructions

  1. In a medium bowl, combine the grated zucchini, beaten eggs, chopped onion, flour, Parmesan cheese, Mozzarella cheese, and salt. Stir well to distribute the ingredients evenly.
  2. Heat a small amount of oil in a skillet over medium-high heat. Drop the zucchini mixture by heaping tablespoonfuls into the skillet and then flatten with a spatula to form a patty shape.
  3. Cook the patties for a few minutes on each side until golden brown and crispy. Repeat with the remaining mixture, adding more oil to the skillet as needed.
