These Air Fryer Zucchini are a delightful side dish with a crispy exterior and tender interior. Quick to make in just 20 minutes, and they are oil-free!

Ingredients

Breadcrumb Mixture:

  • 1½ cups panko breadcrumbs
  • ½ cup grated parmesan cheese
  • 2 teaspoons onion powder
  • 1 teaspoon Italian seasoning
  • ½ teaspoon kosher salt
  • ½ teaspoon fresh cracked black pepper

Zucchini:

  • 2 medium-sized zucchini (each zucchini weighed 7 ounces)
  • 1 large egg
  • 4 tablespoons half and half

Instructions

  1. Mix Breadcrumb Ingredients: Combine panko breadcrumbs, parmesan cheese, onion powder, Italian seasoning, salt, and pepper in a bowl.
  2. Prepare Zucchini: Slice zucchinis into ⅛-inch rounds.
  3. Prepare Egg Wash: Whisk egg and half and half in a bowl.
