Ingredients

For the Shrimp:

  • 2 cups cooked rice, white or brown
  • 1 ripe avocado, diced

  • 1/4 cup red onion, thinly sliced
  • 1/4 cup chopped cilantro

For the Cilantro Lime Sauce:

  • 1/2 cup sour cream or Greek yogurt
  • 1/4 cup chopped cilantro
  • 2 tbsp lime juice
  • 1 tbsp water
  • 1/4 tsp salt
  • Pinch of black pepper

Instructions

  1. In a bowl, toss shrimp with olive oil, chili powder, cumin, garlic powder, salt, and pepper. Let sit for 5 minutes. Heat a large skillet over medium-high. Cook shrimp in a single layer, 2–3 minutes per side, until pink and opaque. Set aside.
  2. Whisk together all sauce ingredients in a small bowl until smooth. Chill until serving.
  3. Divide rice into 4 bowls. Top each with shrimp, avocado, tomatoes, red onion, and cilantro.
  4. Drizzle generously with cilantro lime sauce. Add a lime wedge for garnish if desired.
