Ingredients

For the Pasta:

  • 12 oz (340g) pasta (spaghetti, penne, or fusilli)
  • 2 tbsp olive oil
  • 2 medium zucchinis, sliced into half-moons
  • 1 1/2 cups cherry tomatoes, halved
  • 3 cloves garlic, minced
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp red pepper flakes (optional, for heat)
  • 1 tsp Italian seasoning
  • 1/4 cup grated Parmesan cheese (plus extra for serving)
  • 1/4 cup fresh basil, chopped
  • 1/2 cup reserved pasta water (if needed)

Instructions

  1. Step 1: Cook the Pasta – Bring a large pot of salted water to a boil. Add the pasta and cook according to the package directions until al dente. Drain the pasta, reserving 1/2 cup of pasta water, and set aside.
  2. Step 2: Prepare the Vegetables – Heat olive oil in a large skillet over medium heat. Add the zucchini slices and cook for 3-4 minutes until tender but still crisp. Add minced garlic and sauté for another minute. Add cherry tomatoes and cook for 2-3 minutes until soft.
  3. Step 3: Combine and Toss – Add cooked pasta to the skillet with zucchini and tomatoes. Season with salt, pepper, red pepper flakes, and Italian seasoning. Toss to combine. Add reserved pasta water if needed. Stir in Parmesan cheese and basil until melted.
  4. Step 4: Serve – Divide pasta among plates. Top with extra Parmesan and basil. Serve immediately.
