This chickpea salad is fresh, flavorful, and quick to make. A healthy side dish or light meal packed with veggies, protein, and a zesty dressing.

Ingredients

For the salad:

  • 2 cans 15 ounces each chickpeas, drained and rinsed
  • 1 cup cherry tomatoes halved (or diced if larger)
  • 1 cup cucumber diced (English cucumber works great)
  • 1/4 cup red onion finely diced (soak in water for a milder flavor)
  • 1/4 cup fresh parsley chopped (or cilantro as an alternative)
  • 1/4 cup crumbled feta cheese optional, for a tangy touch

For the dressing:

  • 3 tablespoons olive oil
  • 1 1/2 tablespoons fresh lemon juice about half a lemon
  • 1 teaspoon Dijon mustard
  • 1 clove garlic minced
  • 1/2 teaspoon dried oregano
  • Salt and pepper to taste
  • Optional but delicious:
    • Red pepper flakes for a little heat
    • Pita bread or lettuce leaves for serving as wraps or salad cups

Instructions

  1. Step 1: Prep your veggies and chickpeas – Rinse and drain your chickpeas. Chop the cherry tomatoes, cucumber, red onion, and parsley. Set aside.
  2. Step 2: Make the dressing – Whisk together olive oil, lemon juice, Dijon mustard, garlic, oregano, salt, and pepper. Adjust seasoning.
  3. Step 3: Combine everything – In a bowl, add chickpeas, veggies, parsley, and feta. Pour dressing, toss gently.
  4. Step 4: Chill and serve – Let the salad sit in the fridge for 20–30 minutes. Serve as desired.
