Ingredients

Zucchini Bake:

  • 2 medium zucchinis, sliced into half-moons
  • 1 cup cherry tomatoes, halved

  • 1/2 cup black beans, drained and rinsed
  • 1/2 cup chopped onion
  • 1 clove garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon ground cumin
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon smoked paprika
  • Salt and black pepper, to taste
  • 4 large eggs
  • 1/2 cup milk
  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded pepper jack or Monterey Jack cheese
  • 2 tablespoons chopped fresh cilantro or parsley (optional)

Instructions

  1. Preheat Oven: Preheat the oven to 375°F (190°C) and lightly grease a baking dish.
  2. Sauté Vegetables: In a skillet, sauté onion and garlic, then add zucchini, tomatoes, corn, and black beans with spices.
  3. Prepare Egg Mixture: Whisk eggs and milk in a bowl.
  4. Assemble and Bake: Transfer vegetables to baking dish, pour egg mixture, top with cheeses, and bake for 25-30 minutes.
