A quick and simple recipe for authentic homemade taco soup that is loaded with flavor. Perfect for a cozy and satisfying meal.

Ingredients

Main Ingredients:

  • ½ tablespoon olive oil
  • pounds ground beef

Aromatics:

  • 1 small yellow onion, diced
  • 2 cloves garlic, minced

Seasonings:

  • 1 package taco seasoning

Veggies and Legumes:

  • ½ cup green pepper, diced
  • 2 cups beef broth
  • 1½ cups frozen corn
  • 1 can black beans, drained and rinsed
  • 1 can pinto beans, drained and rinsed

Sauce and Canned Goods:

  • 15 ounces tomato sauce
  • 10 ounces Rotel tomatoes
  • 4 ounces green chilies

Additional:

  • 1 cup water, optional

Instructions

  1. Brown the Beef: In a large pot, brown the ground beef and onions in olive oil until cooked through. Drain excess fat.
  2. Add Seasonings: Stir in garlic and taco seasoning; cook for a minute.
  3. Combine Ingredients: Add remaining ingredients to the pot, bring to a boil. Adjust thickness with water if needed.
  4. Simmer: Reduce heat and simmer for 25-30 minutes.
  5. Serve: Top with your favorite toppings and enjoy!

  • This soup can be made in a slow cooker for added convenience.
  • Pre-cooked ground beef can be stored in the fridge or freezer for future use.
