This Taco Doritos Casserole is a delicious twist on a classic comfort food. Layers of seasoned ground beef, corn, cheese, and crushed Doritos come together for a flavorful and satisfying meal that the whole family will love.

Ingredients

For the Casserole:

  • 1 pound lean ground beef
  • ½ yellow onion, diced
  • 1 teaspoon minced garlic
  • 1 packet taco seasoning
  • 12 ounce bag frozen corn
  • 14.5 ounce can petite diced tomatoes with green chilies, NOT drained
  • 1 cup sour cream
  • 2 cups finely crushed Doritos
  • 1 cup loosely crushed Doritos
  • 3 cups Mexican blend cheese
  • 1 cup black beans (optional)

For Garnish (optional):

  • Sliced green onions
  • Diced tomatoes
  • Shredded lettuce
  • Avocado
  • Sour cream

Instructions

  1. Preheat Oven: Preheat the oven to 350 degrees.
  2. Prepare Dish: Spray a 9×13-inch baking dish with nonstick spray.
  3. Crush Doritos: Crush the Doritos – 2 cups finely crushed and 1 cup loosely crushed. Set aside.
  4. Cook Beef Mixture: In a skillet, cook the ground beef and onions. Add garlic, corn, taco seasoning, tomatoes with chilies, and 2 cups of finely crushed Doritos. Stir in black beans if desired.
  5. Combine Ingredients: Remove from heat. Stir in sour cream and 2 cups of cheese. Pour into the casserole dish.
  6. Bake: Bake for 5 minutes. Then, top with 1 cup of cheese, 1 cup of loosely crushed Doritos, and bake for another 5 minutes until cheese is melted.
  7. Serve: Remove from oven and serve hot. Garnish with optional toppings if desired.
