Soft tortillas layered with seasoned beef, Rotel, olives, corn, and cheese make this easy and cheesy taco bake a perfect weeknight family dinner.

Ingredients

For the Beef Mixture:

  • pounds ground beef
  • 1 chopped onion
  • 1 package taco seasoning mix
  • 10 ounces Rotel, not drained
  • 2.25 ounces sliced black olives
  • 15 ounces corn, drained

For Layering:

  • 4 taco-size flour tortillas
  • 2 cups cheddar cheese, divided in half

Instructions

  1. Cook the Beef: In a skillet, cook ground beef and onions until beef is browned and onions are tender.
  2. Season the Beef: Stir in taco seasoning and water; cook for 8-10 minutes.
  3. Add Ingredients: Mix in Rotel, olives, and corn.
  4. Layer: In a 9×13-inch dish, layer tortillas, beef mixture, and cheese twice.
  5. Bake: Bake at 350°F for about 20 minutes until bubbly.
  6. Serve: Top with sour cream and other taco toppings.

Notes

  • Ground beef can be pre-cooked and stored for quicker preparation.
  • Can be assembled a day ahead and baked before serving.
