These Strawberry Lemon Blondies combine sweet, juicy strawberries with bright lemon zest in a soft, buttery blondie base, topped with a tangy pink glaze for a refreshing and elegant treat.

Ingredients

  • 1 cup unsalted butter, room temperature
  • ¾ cup granulated sugar
  • 1 large egg
  • ¼ cup fresh-squeezed lemon juice
  • 2¼ cups all-purpose flour
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 1 cup diced fresh strawberries
  • For the glaze:
  • 1 cup powdered sugar
  • 1 tablespoon strawberry puree (about 24 berries strained)
  • ~1 tablespoon lemon juice (to achieve spreadable consistency)

Instructions

  1. Preheat oven to 350 °F (175 °C) and line a 9″ square pan with parchment paper, leaving overhang for easy removal.
  2. Cream butter and sugar together until fluffy.
  3. Beat in the egg, then stir in lemon juice.
  4. In a separate bowl, whisk flour, baking powder, and salt.
  5. Add dry ingredients to the wet ingredients and mix until just combined.
  6. Gently fold in diced strawberries.
  7. Spread batter evenly in prepared pan.
  8. Bake for 30–35 minutes, until edges are golden and a toothpick inserted comes out mostly clean.
  9. Let cool completely on a rack.
  10. For the glaze, strain strawberry puree, then whisk with powdered sugar and lemon juice until smooth.
  11. Spread glaze over cooled blondies and allow it to set.
  12. Lift blondies using parchment, slice, and serve.
