Ingredients

Pie Base

  • 1 9-inch premade graham cracker crust (gluten free if preferred)

Filling

  • 1 package (3 oz) strawberry gelatin (Jell-O brand recommended)
  • 1/2 cup boiling water
  • 1 cup ice cubes
  • 1/2 container (4 oz) frozen whipped topping, thawed (Cool Whip)
  • 1 cup plain whole milk Greek yogurt
  • Additional Cool Whip for decorating
  • Fresh berries (such as sliced strawberries) for garnish

Instructions

  1. Prepare Gelatin Mixture: In a large bowl, pour 1/2 cup of boiling water over the strawberry gelatin powder and stir thoroughly until fully dissolved.
  2. Cool the Gelatin: Add 1 cup of ice cubes to the dissolved gelatin and stir continuously; this will bring the gelatin to a cooler temperature and start setting it slightly for a creamy texture.
  3. Mix Filling Ingredients: Stir in half of the thawed Cool Whip (about 4 oz) and 1 cup of plain Greek yogurt into the gelatin mixture. Whisk until smooth and creamy, ensuring everything is fully combined.
  4. Assemble the Pie: Pour the creamy gelatin mixture into the premade graham cracker crust, smoothing the top evenly.
  5. Chill to Set: Refrigerate the pie for at least 4 hours, allowing the filling to firm up properly.
  6. Decorate the Pie: Once set, use a pastry bag fitted with a 1M tip to pipe swirls of the remaining Cool Whip on top of the pie.
  7. Garnish and Serve: Garnish with fresh sliced strawberries or other preferred fresh berries. Keep chilled until ready to serve.
